Recipes that remind us of special moments like chocolate cake to remind us of birthdays, homemade ice cream to remind us of summer break or fresh baked bread that reminds us of the holidays. I have a few recipes in mind that remind me of certain things and one of them is snickerdoodles. Growing up I would pretend to cook Krabby Patties with an imaginary grill and spatula until I was old enough to get my hands on real kitchen tools. One of the first recipes I attempted was snickerdoodles. I followed a recipe from a small cookbook that I got as a birthday gift…that I’m sure I can find somewhere if I just clean out my closet…anyways. I made cookies for my family who, looking back on it, probably pretended to love them and then turned their back to throw the dessert in the trash. I have since reinvented that recipe I originally made years ago and added peanut butter to the recipe. I did this because, in my memory, peanut butter and chocolate kisses are what make snickerdoodles snickerdoodles. I was surprised when I began looking up snickerdoodle recipes to find that they are basically just sugar cookies rolled in cinnamon. Maybe he forgot, maybe he was on a diet or maybe he was over chocolate chip cookies and wanted something different. Broma Bakery’s Fudgy Peppermint Cookies might be what Santa is craving this year. This Christmas cookie recipe was simple. If you are an avid baker than you likely already have the ingredients needed in your pantry. Or if you are like me, someone that bakes from time to time but enjoys a good homemade recipe, than I had to run out and buy peppermint extract, espresso powder and candy canes. What I found refreshing about this recipe was that the total time listed on Broma Bakery’s website was fairly accurate. Prep time took about 15-20 minutes while cook time was exact at 10 minutes. It is noted in the recipe not to waste any time with these. As soon as the dough is ready start shaping the cookies and get them in the oven! Then, once cookies are done baking, immediately top with crushed candy canes. Personally, I have a bad habit of not reading recipes before starting them and often get surprised when dough has to rest for a few hours, so this recipe is perfect for the impatient baker. Biting into these cookies I immediately noticed how accurate their name is, they were indeed fudgey and full of peppermint. I found the recipe to be a bit too fudgy and peppermint too strong. I’d compare the taste to a homemade Little Debbie Cake, but unfortunately, not as good. I offered some cookies to friends to see if they had opposing opinions. I noticed when anyone would bite into them they would immediately make a face as to say, “these are alright…just not what I was hoping for.” Most of my friends agreed, this recipe was too much of what it is supposed to be: fudgy and full of peppermint. I have a feeling that Santa may feel the same way about these cookies as my friends and I do and be hoping for a cookie that is less of a shock to the tastebuds. Sorry Santa, but if it ain’t broke don’t fix it! It may be chocolate chip cookies again for the 24th year in a row. I made this cake for my friends’ and my Secret Santa party. Entering the party I was greeted with many “oohs” and “ahhs” and one friend even declaring I had won the unofficial bake off. I set the cake in the center of the dining table, surrounded by charcuterie boards, cheese dips, fruit jellies, garlic shrimp, dinner rolls, meatballs and cookies. (I must say, an impressive display for a couple of friends in their mid 20s). The decorations hung on the tree and tabletops were all from the thrift store….before you laugh, it is a choice that is both good for the environment and our pockets. As if the decorations and music choice wasn’t clear enough, once I placed the cake in the center of the table, it was clear that this was a Christmas party. When I was making the cake, the smell of ginger and other baking spices, such as nutmeg and cinnamon, filled my home and brought back memoires of Christmas morning. But from the looks of it, it was just a brown Bundt cake. Then, once I added the glaze everything started to come together. The glaze was slowly pouring down the sugarcoated sides which made the cake much more festive. And then came the pomegranate arils. The bright red color popped on top of the cake as if they were lights hung on a Christmas tree. When sprinkling the topping I had to let out an audible “wow.” Yet, looks can only get you so far when it comes to food. Does it taste any good? That is really what we all care about. If you like sweets that aren’t too sweet, with complex flavors and a surprising topping than yes, it does taste very good. The cake itself is moist and has all the classic holiday flavors with gingerbread taking the lead. It is also easy to chew, not drying of your mouth, or too gummy. The glaze is light and creamy being that heavy cream and sour cream are two main components. The glaze compliments the gingerbread taste perfectly. Just as you would top gingerbread cookies with frosted faces or bowties, this more sophisticated cake is also topped with frosting, just with a more satisfying smooth taste. The pomegranate arils pop in your mouth, exploding with natural sweetness that surprises your taste buds. Nothing about this cake is overbearing, the ingredients work together to give you an even spread of flavors. Before I began making the cake, I knew I would be committing to the holiday spirit as it did take extra effort to make everything from scratch. Although it took more time, the recipe was easy to follow. So I turned on holiday classics like “Jingle Bell Rock,” “White Christmas” and, a favorite of mine, “Santa Clause is Comin’ to Town” by Bruce Springsteen and enjoyed my afternoon of baking. The whole process took about two and a half hours including baking and cooling time. The tools needed, besides your kitchen basics, are a Bundt pan, a stand or hand mixer, and a wire rack (I got creative and used one of my oven racks). Lastly, if you are looking for a healthy holiday dessert, do not look at this cake. The cake is sugarcoated and includes sugar in both the cake and the glaze. While it may not taste overly sweet, you may still want to aggressively floss after eating a slice. Our class went to La V Vietnamese Fusion, located in downtown St. Petersburg, FL, to take photos of a few of their signature dishes. The task was to not only capture the dish in the photo but also the atmosphere of the restaurant. The issue here is that it’s hard to see the noodles without changing the angle, but if I changed the angle it would be hard to show the atmosphere. It was actually taken on a cafeteria tray sitting on top of a trash can outside the university dining hall. What helped me here was that it was raining in the middle of the day, which gave me moodier lighting to work with. I also used a piece of tinfoil as a reflector for added highlights. But for the most part, I’m still happy with how this photo turned out.
